Ingredients:
2 chicken breasts
1 cup quinoa (rinsed)
2 zucchinis, sliced
2 tablespoons olive oil
Juice of 1 lemon
Salt and pepper to taste
1 teaspoon oregano (optional)
Fresh parsley for garnish
Instructions:
Cook the quinoa: boil 2 cups of water, add the quinoa, and simmer on low for 15 minutes until fluffy.
Season the chicken breasts with salt, pepper, and lemon juice.
Grill the chicken in a pan with one tablespoon of oil, about 5 minutes per side, until golden.
On a baking tray, place the zucchini slices, drizzle with oil, salt, and oregano, and roast at 400°F (200°C) for 15 minutes.
Serve the chicken over the quinoa, with the roasted zucchini on the side. Garnish with fresh parsley.
