Ingredients:
  • 2 chicken breasts

  • 1 cup quinoa (rinsed)

  • 2 zucchinis, sliced

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste

  • 1 teaspoon oregano (optional)

  • Fresh parsley for garnish

Instructions:
  1. Cook the quinoa: boil 2 cups of water, add the quinoa, and simmer on low for 15 minutes until fluffy.

  2. Season the chicken breasts with salt, pepper, and lemon juice.

  3. Grill the chicken in a pan with one tablespoon of oil, about 5 minutes per side, until golden.

  4. On a baking tray, place the zucchini slices, drizzle with oil, salt, and oregano, and roast at 400°F (200°C) for 15 minutes.

  5. Serve the chicken over the quinoa, with the roasted zucchini on the side. Garnish with fresh parsley.
