Grilled Chicken with Quinoa, Spinach, and Carrot

Ingredients:

  • 2 chicken breasts

  • 1 cup quinoa (rinsed)

  • 2 grated carrots

  • 2 cups fresh spinach

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • Juice of 1 lemon

  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa: boil 2 cups of water, add the quinoa, and simmer on low for 15 minutes, until fluffy.

  2. Season the chicken breasts with salt, pepper, and lemon juice.

  3. Heat one tablespoon of oil in a pan and grill the chicken for about 4-5 minutes per side, until golden and cooked through.

  4. In another pan, add a tablespoon of oil and sauté the garlic, carrots, and spinach until just softened.

  5. Mix the cooked quinoa with the sautéed vegetables.
