Homemade Green Banana & Peanut Butter Cookies (SIBO-Friendly)
Finding sweet, homemade snacks that don’t trigger SIBO symptoms can be hard — many store-bought cookies contain flours, sugars, or fibers that ferment in the gut and cause discomfort. These homemade cookies made with slightly green banana and natural peanut butter are simple, gluten-free, flour-free, and lactose-free, and can work as a light snack when eaten in moderation within a SIBO-adapted eating plan.
Why These Cookies Can Be SIBO-Friendly
They use slightly unripe (green) banana, which has fewer fermentable sugars than fully ripe banana.
100% natural peanut butter adds healthy fat and satiety without added sugar or fermentable ingredients.
No flour, gluten, or lactose — ideal if you’re avoiding common digestive triggers.
Optional stevia (or no sweetener at all) keeps fermentable sugars very low.
Ingredients (Makes ~6–8 Cookies)
1 slightly green (unripe) banana, peeled and mashed
2 heaping tablespoons 100% natural peanut butter (no sugar added)
Stevia to taste (optional)
Instructions
Preheat your oven to 180 °C (about 350 °F).
Mash the banana with a fork in a bowl until smooth.
Add the peanut butter and mix well until fully combined.
Add stevia if you want a sweeter cookie (optional).
Shape small cookies and place them on a baking tray lined with parchment paper.
Bake about 30 minutes, or until the cookies are firm and lightly set.
Remove and let cool before eating — cooling improves texture and may help with tolerance.
SIBO-Friendly Tips
Portion control matters: these are best in small servings (1–2 cookies), especially early in your diet plan.
If you’re in a strict SIBO elimination phase, you may want to avoid even green banana until tolerated.
Try them first on a day when you’re eating familiar foods to see how your digestion responds.
Variations (depending on tolerance) can include a pinch of cinnamon or swapping peanut butter for natural almond butter.
