If you've been diagnosed with SIBO, you know how challenging it can be to find a tasty, light bread option. Today, I’m sharing a potato bread recipe that’s gluten-free and low-fermentation—perfect for your dietary plan.

Ingredients:

  • 2 cups mashed potatoes (dairy-free)

  • 1 ½ cups rice flour

  • ½ cup tapioca starch

  • 1 teaspoon xanthan gum

  • 2 teaspoons baking powder

  • 1 teaspoon salt

  • 2 eggs

  • ¼ cup olive oil

  • 1 tablespoon honey (optional, for reintroduction phase)

Instructions:
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.

  2. In a bowl, mix the flours, xanthan gum, baking powder, and salt.

  3. In another bowl, beat the eggs with the mashed potatoes, oil, and honey.

  4. Add the dry ingredients to the wet ingredients and mix until smooth.

  5. Pour the batter into the loaf pan and let it rest for 20 minutes.

  6. Bake for 40 minutes, or until a toothpick comes out clean.

  7. Let it cool, then slice and enjoy.

Tips:
