Potato Knishes (SIBO-Friendly, Gluten-Free, and Dairy-Free)

If you have SIBO, you know how crucial it is to find flavorful recipes that won’t irritate your digestion

Today, I’m sharing a special take on knishes, a beloved Jewish dish, adapted so you can enjoy them gluten-free, dairy-free, and onion-free. Let’s dive into the recipe!

SIBO-Friendly Ingredients

  • 4 medium potatoes (peeled, boiled, and mashed)

  • 1 cup rice flour (for the dough)

  • 2 tablespoons cornstarch (or maize starch)

  • 2 tablespoons olive oil

  • 1 grated carrot

  • 1 small potato (grated, optional, for extra texture)

  • 1 teaspoon chopped garlic (not onion, just garlic)

  • Fresh parsley, chopped

  • Salt and pepper to taste

Step-by-Step Preparation

  1. Make a smooth mashed potato and let it cool slightly.

  2. Mix the mashed potatoes with rice flour, cornstarch, oil, and a pinch of salt. Knead until you have a uniform dough.

  3. Grate a carrot and an extra small potato; sauté them with garlic until soft. Add parsley and mix.

  4. Take small portions of the dough, flatten them, and place a bit of the filling in the center.

  5. Fold them over, forming little pockets, and arrange them on a baking tray.

  6. Bake at 350°F (180°C) for about 20 minutes, until golden brown.

Serving Suggestions

Serve your knishes warm with a cucumber and herb salad or a bit of unsweetened coconut yogurt. They make a perfect light lunch or snack, staying gentle on your digestion.
