4 medium potatoes (peeled, boiled, and mashed)
1 cup rice flour (for the dough)
2 tablespoons cornstarch (or maize starch)
2 tablespoons olive oil
1 grated carrot
1 small potato (grated, optional, for extra texture)
1 teaspoon chopped garlic (not onion, just garlic)
Fresh parsley, chopped
Salt and pepper to taste
Step-by-Step Preparation
Make a smooth mashed potato and let it cool slightly.
Mix the mashed potatoes with rice flour, cornstarch, oil, and a pinch of salt. Knead until you have a uniform dough.
Grate a carrot and an extra small potato; sauté them with garlic until soft. Add parsley and mix.
Take small portions of the dough, flatten them, and place a bit of the filling in the center.
Fold them over, forming little pockets, and arrange them on a baking tray.
Bake at 350°F (180°C) for about 20 minutes, until golden brown.
Serving Suggestions
