1 cup cooked white rice (or brown rice)
1 can tuna in water (no oil)
2 hard-boiled eggs, chopped
2 tomatoes, chopped
10 black olives (pitted)
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley (low-FODMAP) for garnish
Instructions:
Cook the rice according to package instructions and let it cool.
In a large bowl, combine the rice, flaked tuna, chopped tomatoes, olives, and chopped eggs.
