Hello to all our readers at SIBO Recipes!

Who says following a SIBO diet means saying goodbye to desserts? We know how challenging it can be to find a sweet treat that feels good and, most importantly, tastes delicious. Sometimes, what we miss most is that smooth, comforting texture of a homemade dessert.

That's why today, I'm bringing you a recipe that is a real gem: a SIBO-Friendly Homemade Flan. It’s creamy, it’s sweet (without the sugar that gives us trouble!), and best of all, it's incredibly easy to make. We’ve adapted this classic recipe so you can enjoy it without a worry.

Creamy SIBO-Friendly Flan (No Oven Required!)

This recipe is designed to be low-FODMAP, lactose-free, and refined sugar-free. It's a real treat for your gut!

Ingredients:

  • 4 fresh eggs.

  • 400 ml (approx. 1 2/3 cups) of lactose-free milk or your favorite permitted plant-based milk (almond milk works great here).

  • 100 g (approx. 3.5 oz) of lactose-free cream cheese (the secret for extra creaminess!).

  • Granulated sweetener suitable for baking, to your taste (like stevia or erythritol).

  • 1 teaspoon of good-quality vanilla extract.

Step-by-Step: It's This Easy!

  1. The Magic Mix:
The first step is the simplest. Place all the ingredients into a blender: the eggs, lactose-free milk, cream cheese, your chosen sweetener, and the vanilla extract. Blend for one minute until you have a completely smooth and lump-free mixture. We want a super silky flan!

  2. Into the Water! (Stovetop Water Bath):
You don't need to turn on the oven for this. Find a large pot and place a folded dish towel or a paper towel at the bottom (this will prevent the ramekins from moving and rattling). Pour the mixture into individual ramekins or heat-safe glass jars. Arrange them in the pot and then add hot water until it reaches about halfway up the sides of the molds.

  3. Gentle and Patient Cooking:
Cover the pot and cook over very low heat for about 35-40 minutes. The water should never come to a rolling boil, just a gentle simmer. You'll know your flan is ready when a knife or toothpick inserted into the center comes out completely clean.

  4. A Well-Deserved Rest (Chilling is Key!):
Once cooked, turn off the heat and carefully remove the flans from the pot. Let them cool to room temperature. Once they are no longer warm, transfer them to the refrigerator for at least 3 hours. This step is crucial for the flan to set and achieve that firm, silky texture we all love.

Bonus Tips from SIBO Recipes:

  • What about the caramel? Traditional caramel is made from sugar, which we avoid on this diet. I recommend enjoying the flan as is, focusing on its delicate flavor and creamy texture. It's delicious on its own!

  • Flavor Variations: If you want to experiment, you can add a pinch of cinnamon or the zest of a lemon to the mixture.

  • The Perfect Texture: Don't skip the chilling step. Patience here is rewarded with the perfect dessert.

We hope you enjoy this recipe as much as we do. Leave us a comment and let us know how it turned out!
