📝 INGREDIENTS (for 6 muffins SIBO)
🍌 2 very ripe bananas (brown spots = sweeter)
🥣 1 cup gluten-free oats
🥚 2 eggs
🥥 2 tbsp coconut oil
✨ 1 tsp cinnamon
🌿 1 tsp gluten-free baking powder
🧂 A pinch of salt
🫐 ½ cup blueberries or strawberries (optional)
👩🍳 INSTRUCTIONS for SIBO Muffins
1️⃣ Preheat the oven to 180°C (350°F) and prepare your muffin molds with liners or coconut oil.
2️⃣ Mash the bananas with a fork until smooth.
3️⃣ Add the eggs and coconut oil. Mix well.
4️⃣ Add the oats, cinnamon, baking powder, and salt. Mix gently—don’t overmix.
5️⃣ If using blueberries or strawberries, fold them in at the end.
6️⃣ Fill the molds up to ¾ full.
7️⃣ Bake for 22 minutes or until a toothpick comes out clean. 🙌
8️⃣ Let cool for 10 minutes before removing from the molds.
💡 TIP: Make a double batch and freeze them. Snack ready for the whole week!
