This zucchini and tomato scramble is a delicious, light option that’s perfect for SIBO. You can serve it with rice or gluten-free noodles, creating a nutritious, easy-to-digest meal.

Ingredients:

  • 1 zucchini, sliced (low-FODMAP)

  • 2 tomatoes, chopped

  • 2 eggs

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Optional: cooked brown rice or gluten-free noodles (as desired)

Instructions:

  1. If you plan to serve it with rice or noodles, cook them first according to package instructions.

  2. In a pan, heat the olive oil and sauté the zucchini until tender.
