Zucchini and Tuna Lasagna (SIBO Friendly)
A Low-FODMAP Comfort Dish for People with Digestive Sensitivity
Lasagna is usually off-limits for people with SIBO because it contains wheat pasta, onion, and garlic-heavy sauces. This zucchini and tuna lasagna keeps the comfort and flavor while using ingredients that are more compatible with a SIBO-friendly diet.
Ingredients
2 large zucchinis
1 can tuna in olive oil
Lactose-free ricotta
Tomato sauce (garlic and onion free)
Salt
Black pepper
Olive oil
Preparation
Slice the zucchini lengthwise into thin sheets.
In a baking dish, layer zucchini, tuna, ricotta, and tomato sauce.
Repeat layers until full.
Bake at 180°C (350°F) for 25–30 minutes.
Let it rest before serving.
